Perfect Eggs





















What is it about eggs that I find so appealing? When I go out to gather eggs from the nest boxes I am always struck with joy when I see these warm brown orbs safely nestled in the straw. I know where they come from, but I can't escape the childlike feeling of discovering these little treasures left behind by secretive fairies.

I love how a freshly laid egg is still warm from the body heat of the hen that laid it. I roll the eggs around in my hands like big worry beads enjoying the texture of the shells. The smooth, round feel of eggs in my hands is somehow soothing.

I used these lovely eggs to make omelets for dinner tonight. I filled the omelets with finely chopped mushrooms and green onion blended with cream cheese--so satisfying! I made a big skillet-sized hash brown to go with the omelets and we all enjoyed having this breakfast treat for dinner.

  1. Amy I still have those same feelings about finding eggs in the coop. It's almost indescribable how much it feels like a found treasure or something. We eat omelets for dinner at least once a week ourselves, quite a treat!

    How in the world could anybody think eggs are bad for us? and never would we eat just the egg whites. We even eat 'em raw in the egg nog.

  3. I have one of those microwave devices that poaches eggs, set the microwave for 50 seconds. Just tonight, we had poached eggs, grits, toast, and carrot cake.

  5. Sharon, I love making breakfast for dinner at least once a week and if I'm feeling really ambitious I'll have the boys wake me at 5 a.m. once a week to cook breakfast for everyone. We love eggs!

    Joanna, it's recommended that people eat two eggs a day. Eggs are one of the perfect foods, like bananas and avocadoes. Eggs from my own free range hens are much more nutritious than those I used to buy in the store. I don't miss those store bought eggs at all! I want to make poached eggs this week and I've got some baby spinach on hand for them. I have to find the recipe I want to use now.

    Chris, seems you leave here hungry pretty regularly! I like my cookbooks too. That antique tool box was found in the basement when we moved in last year. I had never seen it before so I didn't know who it belonged to. I distressed the pain on with with a light sanding and discovered that all my cookbooks fit in it perfectly. It sits on the kitchen counter and is guarded by the little kitchen chickie. I see that I am a big fan of Betty Crocker! I'm missing my copy of Julia Child's "How To Cook". I have to get myself another copy. It's a must-have for any cookbook collection. That book taught me how to properly boil eggs and how to fry chicken.

    Now go make yourself an egg sandwich!

  6. Amy, you're a sensory person as I am. I buy clothes and books by the feel of them and I love cradling the warm eggs in my hands.

    I've been trying to convince my father-in-law to eat more eggs. He's still living by the 'only 4 eggs a week' rule that came out in the early eighties when they thought that eggs caused high cholestrol. And even though he loves eggs cooked soft, he won't listen to me when I tell him that there's very little chance he can get salmonella from fresh eggs. I've been eating them that way since I was a baby (even store-bought eggs) and have never gotten sick from them. He's hard-headed.

  7. I'm so eager to get eggs! The day I get my first one is going to be so exciting. The girls aren't laying yet, but they are old enough now so I'm hoping any day.

  9. Gathering eggs from my grandmas hens is a wonderful memory from childhood. It was a little gift tucked away in a nest, sometimes I was brave enough to reach under the hen.
    That was the main reason for getting the chickens I have today.

  11. I still get excited seeing eggs in a nest! And I love eating our eggs. Knowing where they came from and what's in them (or mostly what's in them! You never know with chickens!).

  12. Amy, this was a great post on eggs! I agree with you on loving the feel of eggs, especially when they are freshly laid. They are such a perfect shape, and smoothness. (well, other than the occasional lumpy shelled one....). I have had chickens for about 18 years and I STILL get excited over finding them!

  15. I loved this post about your love of eggs. I feel the same way. I love eggs!

    That's probably one of the special farm duties I miss the most now that I'm laid up...gathering eggs each day.

    My family considers a chore and don't appreciate it like I do. I remember when we got our first eggs. Each time I'd run inside after gathering and declare how exciting this egg was because of it's color, size, shape, everything!

    Eggs are the true meaning behind: 'great things come in small packages'!

  16. Eggs and potatos. I love finding an egg (I have 3 chickens and only 1 started laying). And potatos, like a treasure hunt when it's harvest time. Now that I have 3 B's, they were most intersted in the potato harvest, inspecting all the turned over dirt and eating all kinds of goodies!
