Duck Eggs

Can you tell which one is the duck egg? My ducks lay jumbo eggs and I like to use them in cakes. They seem to make cakes more moist. I can't explain why but that's been my experience. Duck eggs are also more nutritious than chicken eggs. For a comparison of nutrients, click here.

While we're on the subject of duck eggs, I woke up this morning to see that Macaroni has 10 brand new fuzzy babies under her. There are 3 yellow ones and 7 dusky gray ones. I'm going to sell this batch of ducklings. I've got enough in the freezer and ducks are no fun to butcher. Chickens are much easier. It's impossible to scald a duck carcass--they're waterproof! DUH!

  1. I'd say the top right is the duck egg. John just butchered some ducks and turkeys last week and the ducks took 10 times the effort to do. Chicken is MUCH easier, we agree. Cute babies!

  6. Kim, you are correct on the guess. I'm with you, butchering ducks is too much work!

    Barbara, the yellow ones are so YELLOW that they look fake! They are adorable to watch.

    Joanna, yes I have been posting very infrequently. But there's really not much to write about at this time. I do keep up with reading though.

    Lisa, I don't think there's much difference in the flavor at all. If I were to do a blind tasate test I doubt I would be able to tell the difference. Ducks are actually good layers! My hens lay almost every day. They stop laying in the winter when the days get shorter. Ducks are much easier to care for than chickens. If I had it to do over, I might get just ducks!

    Lanny, aren't they sweet? I think ducklings are the cutest babies ever.

  10. Oh, I love the ducklings! We watch a family at the lake and try to talk our daughters into some of our own. But, alas, they are chicken girls all the way.

  11. So they really dont taste different? My step-father swears they do and loves duck eggs, but then he is really strange - no seriously he is odd, so he has mental things about him that are all in his mind about what he likes and doesnt like. Swears he hates tomatoes but loves spaghetti...go figure!

  12. how dare you say you would only keep the ducklings if you were going to butcher them!! that mother duck worked hard to make them hatch, and this is what she gets?!? something must have happened to you to reduce you to this level. Maybe the first duck you hatched died? regardless, you need a therapist if the first thing you think of when you see those fuzzy things is killing them!
