I have been patiently waiting for my first dozen eggs from the chooks. I knew I was getting close this week because they have been consistently laying 8 - 10 eggs each day. Last week they laid 11 on Saturday! Well guess what? They laid 13 yesterday! They skipped right over the first dozen and instead laid a baker's dozen! That makes 61 eggs so far this week, not counting what they'll lay this weekend. I've got Derek on egg gathering duties today with strict instructions to keep track of how many he collects. If that stubborn Ollie would lay I could get 14 in one day!
This was my expression when Derek brought in the last 3 eggs of the day.
Tonight for supper I'm making my pepper, onion and sausage scramble with sausage patties on the side. Everyone loves it and it's a great way to use up a lot of eggs. And of course the crumbled egg shells go right back out to the chickens.
CONGRATULATIONS!!! Your scramble dish sounds delicious. I used to feed my crumbled egg shells to my breeder birds too. Great way to "recycle"! :)
ReplyDeleteI keep saying I should only have about 3 hens to supply any eggs that I would need....but I just love having a nice sized flock with a variety of chickens! It's when I start seeing I have dozens of eggs that I start panicking and end up making egg salad, hard boiled eggs and the dogs get an egg meal. :) I also feed my shells back to my girls.

ReplyDeleteThanks gals! It sure is nice to have the hens feed us this way. And Kim, I haven't yet tried pickled eggs. I think the only thing pickled we like is pickles though. I remember my grandma making beautiful purple pickled eggs and beets. It was nice to look at but the smell turned me off. :-(

ReplyDeleteKathie, so far I've been able to keep up with the chickens, cooking what they lay. I have given some to family and I would be more than happy to sell them to anyone who wants some. The chickens will slow down in the winter and I shouldn't have any trouble using the eggs. Come springtime though I may have to advertise!
